These apple pie pockets are a great go to for a simple fall breakfast, easy to prepare ahead and the family absolutely loves them! Not to mention, they’re actually kinda cute! With a buttery crisp edge, soft inside with bits of apple and apple purée, warm cinnamon and a dash of nutmeg, this is a simple breakfast to warm your soul or a simple dessert to look cute and easy to share!

How To Make Apple Pie Filling

Making the apple pie filling for this on the go apple pie pocket, is fairly easy and this is the part you can prepare ahead. You can also take this recipe from here and create a few other warm fall items such as my homemade applesauce recipe which is perfect for a warm, yummy treat! To start, peel about 3 medium apples. If you use large, just double the rest of the ingredients. Chop into inch pieces and throw in a small pot with a lid.

Add about 3 heavy dashes of cinnamon and a dash of nutmeg. Clove is optional but I think it’s simpler for a breakfast without it. Now you don’t need to add anything else yet as long as you keep the lid on, this will prevent the moisture from escaping the pot, we don’t want to have to add extra liquid in the mixture. Heat on medium for about 5-10 minutes until the apples are soft but still hold together well. Once done take off heat and add 1/2 tablespoon of butter.

Next up, is to make it more of a filling and what you are going to do here is take about half the mixture and blend up with the cornstarch, vanilla, and brown sugar, and since this is such a small amount I find using my baby blender works the best! This is because it doesn’t give the filling much space to blow around, it just blends it up perfect in about 10 seconds with very little cleanup. Exactly what you need if you’re like me and love making yummy recipes, but hate the mess, then this is for you!

How To Make The Pockets

To finally put it all together is where you are going to see the magic happen! Magic? Well, let’s just say deliciousness that makes you want to keep these to yourself! Ha-ha! You want to take 2 pieces of thick bread, I used a thick cut bread like this, because it’s all I had at the time and it actually worked perfect, so this is what I recommend. Roll the 2 slices out flat to give yourself some space to add filing and add up to 2 tablespoons. Use a fork or pocket maker to create a sealed edge so it does not pour out. Butter both sides with your room temp butter and place in a hot pan (this is going to give you that crispy edge) let sizzle just until crisp on both sides, not burnt.

Serving.

Now this is the best time to serve these, fresh hot with crispy buttery edges and warm apple pie filling on the inside. We love this for fall mornings or even dessert, sitting by the warm fire out camping. Enjoy!

  1. Making the filling

    Peel and chop the apples into 1 inch pieces and place into a small pot with cinnamon and nutmeg. Cook on medium for about 5-10 minutes until soft but still hold together. Once cooked, take off heat and add 1/2 tablespoon of butter to the pan. Blend half the apples with cornstarch, vanilla and brown sugar to make a pure type filling and stir back together with the apple pieces. 

  2. Making the pockets

    Take 2 slices of thick cut bread and roll them flat. Add up to 2 tablespoons of filling and use a fork to crimp the edges to make a perfect pocket. Spread softened butter on the bread and place into a hot pant to crisp up both sides of the pocket. Serve fresh and hot!
